Benihana is proud to announce its first locally brewed sake, IZUMI (spring water). The Ontario Spring Water Sake Company began brewing rare, high-quality sake this past February that is now exclusive to The Fairmont Royal York. The sake is prepared using traditional Japanese methods and recipes and made with fresh Ontario spring water sourced for ideal sake brewing. Master sake brewers will tell you that high-quality water is a crucial element in the brewing process. Therefore, it is no surprise why the sake brewer was drawn to Ontario with access to some of the best spring water in the world.
Guest may enjoy the freshly pressed, unpasteurized and unfiltered sake, a style that is currently not available anywhere in Ontario or the eastern seaboard, for the fist time at Benihana. The delicious sake is fruity, rich and delicate; there is no comparison to this high-end Japanese drink. The sake's delightful flavour is enhanced using special Northern Ontario spring water and prepared in the "Junmai" (pure rice) style.
